Sweet Mexican Pancakes

These sweet Mexican pancakes are soft, fluffy, and slightly sweet. They are perfect for breakfast or dessert and taste amazing with honey, syrup, or powdered sugar.

Ingredients

1 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

1/4 teaspoon salt

1 egg

3/4 cup milk

1 tablespoon melted butter

1/2 teaspoon vanilla extract

Instructions

In a bowl, mix the flour, sugar, baking powder, and salt.

In another bowl, whisk the egg, milk, melted butter, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until smooth.

Heat a non-stick pan over medium heat and lightly grease it with butter or oil.

Pour small portions of batter into the pan to form pancakes.

Cook for about 2 minutes until bubbles appear, then flip and cook the other side until golden.
