Broccoli & Apple Salad
Ingredients:
2 cups fresh broccoli florets
1 large apple (any sweet variety), diced
1/4 cup red onion, finely chopped
1/4 cup dried cranberries or raisins
1/4 cup chopped walnuts or pecans (optional)
For the dressing:
3 tablespoons plain yogurt or mayonnaise
1 tablespoon honey or maple syrup
1 teaspoon lemon juice
Salt & pepper to taste
Instructions:
Prepare the broccoli: Steam the broccoli florets for 2–3 minutes until slightly tender but still crisp. Let them cool.
Mix the salad: In a large bowl, combine the cooled broccoli, diced apple, red onion, dried cranberries, and nuts (if using).
Make the dressing: In a small bowl, whisk together yogurt (or mayo), honey, lemon juice, salt, and pepper.
Combine: Pour the dressing over the salad and toss gently until everything is coated.
Chill and serve: Refrigerate for 20–30 minutes before serving for best flavor.
Tip: You can add some shredded cheddar cheese or a sprinkle of sunflower seeds for extra texture and flavor.
