Sugar-Free Flourless Chocolate Fudge Cake
Ingredients:
200g (7 oz) dark chocolate (sugar-free or 85% cocoa)
100g (1/2 cup) unsalted butter
3/4 cup erythritol or preferred sugar substitute
4 large eggs
1 teaspoon vanilla extract
Pinch of salt
Optional: 2 tablespoons unsweetened cocoa powder for dusting
Instructions:
Preheat oven: Preheat your oven to 180°C (350°F). Grease a 20cm (8-inch) round cake pan and line the bottom with parchment paper.
Melt chocolate and butter: In a heatproof bowl over simmering water, melt the chocolate and butter together until smooth. Remove from heat and let it cool slightly.
Whisk eggs & sweetener: In a separate bowl, beat the eggs, erythritol, vanilla, and salt until fluffy and pale.
Combine: Gently fold the melted chocolate mixture into the eggs until fully combined.
Bake: Pour the batter into the prepared pan and smooth the top. Bake for 20–25 minutes, or until the edges are set but the center is still slightly soft.
Cool: Let the cake cool completely in the pan before removing. For best results, chill in the fridge for 1–2 hours to set the fudgy texture.
Serve: Dust with cocoa powder or a few berries if desired. Slice and enjoy a rich, sugar-free chocolate treat!
