Ingredients

2 tablespoons olive oil

1 medium onion, diced

3 carrots, peeled and sliced

2 celery stalks, chopped

3 cloves garlic, minced

8 cups chicken broth

2 cups cooked chicken, shredded

2 medium potatoes, diced

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and black pepper to taste

Fresh parsley for garnish

Instructions

Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook for 5 to 7 minutes until the vegetables begin to soften.

Add the garlic and cook for another minute, stirring constantly to release its aroma.

Pour in the chicken broth and add the potatoes, thyme, parsley, salt, and pepper. Bring the mixture to a gentle boil.
