Fermented Flower & Rocket Drink

Ingredients:

Fresh edible flowers (like hibiscus, chamomile, or rose) – 1 cup

Fresh rocket (arugula) leaves – 1/2 cup

Water – 4 cups

Sugar or honey – 1/2 cup

Starter culture (like a bit of kombucha or water kefir grains) – optional

Lemon juice – 1 tbsp

Instructions:

Prepare the infusion: Boil 4 cups of water and pour over flowers and rocket leaves. Let steep for 10–15 minutes.

Sweeten: Add sugar or honey while the mixture is still warm, stir to dissolve.

Cool: Let the infusion cool to room temperature.

Fermentation (optional): Add a spoon of kombucha or water kefir grains if you want mild fermentation. Cover and leave at room temperature for 1–2 days.

Strain & Serve: Remove flowers and leaves, pour the drink into bottles. Chill in the fridge.

Optional flavor: Add a splash of lemon juice before serving.
