This Southern-Style Collard Greens recipe is slow-simmered to perfection with onions, garlic, and a flavorful broth. It’s a nutritious, cozy, and classic side dish!

 

Ingredients:

 

For the Collard Greens:

 

2 lbs collard greens, washed & chopped

 

1 tbsp olive oil

 

1 small onion, diced

 

3 cloves garlic, minced

 

½ tsp smoked paprika

 

½ tsp black pepper

 

½ tsp red pepper flakes (optional, for heat)

 

1 tsp apple cider vinegar

 

4 cups vegetable broth (or chicken broth)

 

1 bay leaf

Directions:

 

Step 1: Sauté the Aromatics

 

In a large pot, heat olive oil over medium heat.

 

Add onion and cook for 3-4 minutes until softened.

 

Stir in garlic, smoked paprika, black pepper, and red pepper flakes. Cook for 1 minute.

 

Step 2: Add Collard Greens & Simmer

 

Add chopped collard greens to the pot and stir to coat with the seasonings.

 

Pour in vegetable broth, add bay leaf, and bring to a boil.

 

Reduce heat, cover, and simmer for 45-50 minutes, stirring occasionally.

 

Step 3: Finish & Serve!

 

Stir in apple cider vinegar and adjust seasoning if needed.
