Perfect Dark and Light Sponge Cake Recipe

Ingredients

4 eggs

200 g sugar

50 g flour (sifted)

30 g potato starch (or cornstarch)

1 tsp baking powder

100 ml milk

1 pinch of salt

30 g cocoa powder (for chocolate version)

Butter or oil (for greasing)

1 tbsp semolina or flour (for dusting the pan)

Instructions

Separate the eggs

Place egg whites in one bowl and yolks in another.

Whip the egg whites

Add a pinch of salt and beat until soft peaks form.

Gradually add sugar and continue beating until stiff peaks form.

Prepare the yolk mixture

Mix egg yolks with milk, flour, starch, and baking powder until smooth and slightly fluffy.

For a dark sponge, add cocoa powder at this stage.

Combine mixtures

Gently fold half of the whipped egg whites into the yolk mixture.

Then fold in the remaining whites carefully to keep the batter airy.

Prepare the pan

Grease a baking pan and dust it lightly with semolina or flour.

Bake

Pour the batter into the pan and bake in a preheated oven at 180°C for about 30 minutes.

Check doneness

Insert a toothpick in the center — if it comes out clean, the cake is ready.
