Pineapple Quick Bread Recipe

Ingredients:

2 cups all-purpose flour

1 cup sugar

1 teaspoon baking soda

1/2 teaspoon salt

2 eggs

1 can (about 1 cup) crushed pineapple (with juice)

1/2 cup vegetable oil

1 teaspoon vanilla extract

Instructions:

Preheat your oven to 180°C (350°F) and grease a loaf pan.

In a large bowl, mix the flour, sugar, baking soda, and salt.

In another bowl, whisk the eggs, then add the crushed pineapple (with juice), oil, and vanilla.

Combine the wet ingredients with the dry ingredients and mix until just combined (do not overmix).

Pour the batter into the prepared pan.

Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

Let it cool before slicing and serving.

Optional:

Add chopped nuts or coconut for extra flavor.

Top with a simple glaze (powdered sugar + pineapple juice).
