Easy Key Lime Soda Cake
Ingredients
– 1 (15.25-ounce) box white cake mix
– 1 (3.4-ounce) box instant key lime or lime-flavored pudding mix
– 1 cup key lime or lemon-lime soda (not diet)
– 1/3 cup neutral oil (such as canola or vegetable)
Optional Glaze
– 1 cup powdered sugar
– 2–3 tablespoons key lime or lemon-lime soda
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a Bundt pan.
2. In a large mixing bowl, combine the white cake mix and instant lime pudding mix.
3. Add the soda and oil. Mix until the batter is smooth and well combined, about 2 minutes.
4. Pour the batter into the prepared baking pan and spread evenly.
5. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
6. Remove from the oven and allow the cake to cool in the pan for about 15 minutes.
7. For the glaze, whisk together the powdered sugar and 2–3 tablespoons of soda until smooth. Add more soda if needed to reach your desired consistency.
8. Drizzle the glaze over the slightly warm or completely cooled cake.
9. Let the glaze set before slicing and serving.

Serve chilled for an extra refreshing citrus flavor. Garnish with lime zest, thin lime slices, or a dollop of whipped cream for a beautiful presentation.
