3‑Ingredient Depression‑Era Breakfast — Cheap, Crispy & Comforting
This simple breakfast comes straight from the days of the Great Depression — when families had to make filling meals with almost nothing. It’s a humble tradition that has stuck around because it’s cheap, satisfying, and incredibly crispy on the outside with a soft, warm center.
🥣 Ingredients
1 cup yellow cornmeal
3 cups water
1 teaspoon salt
Oil or bacon grease for frying
🥘 Instructions
Prepare the cornmeal mixture:
Whisk 1 cup of water with the cornmeal until smooth to prevent lumps.
Cook the base:
Bring the remaining 2 cups of water and the salt to a boil. Slowly pour in the cornmeal mixture while whisking. Reduce heat and stir for 10–15 minutes until it becomes very thick and pulls away from the sides of the pot.
Chill to firm up:
Spread the cooked cornmeal into a greased dish and smooth the top. Let it cool, then refrigerate for at least 4 hours or overnight until firm.
Fry to golden perfection:
Slice the firm cornmeal into thick squares. Heat oil or bacon grease in a skillet and fry each piece for 3–5 minutes per side until crisp and golden brown outside, with a soft inside.
