Mickey Fluffy Pancakes
Ingredients (for 4–6 pancakes):
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk (or milk + 1 teaspoon lemon juice)
1 large egg
2 tablespoons melted butter
1 teaspoon vanilla extract
Cooking spray or extra butter for the pan
Optional toppings: Maple syrup, chocolate chips, fresh fruit, whipped cream
Instructions
Mix dry ingredients:
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Mix wet ingredients:
In another bowl, whisk together buttermilk, egg, melted butter, and vanilla extract.
Combine:
Pour the wet ingredients into the dry ingredients and stir until just combined. Small lumps are okay — don’t overmix to keep the pancakes fluffy.
Heat the pan:
Preheat a non-stick skillet or griddle over medium-low heat and lightly grease with butter or cooking spray.
Create Mickey shapes:
Use a squeeze bottle or spoon to pour batter in a large circle for the head.
Add two smaller circles at the top sides for the ears.
Cook until bubbles form on the surface and edges look set (about 2–3 minutes). Flip and cook another 1–2 minutes.
Serve:
Stack or serve as-is, and add toppings like syrup, chocolate chips, or fruit.
