Cheesy Sausage Crescent Bites
These cheesy sausage crescent bites are buttery, flaky, savory, and incredibly easy to make. They work perfectly as a party appetizer, quick breakfast, game-day snack, or even a comforting late-night treat. The combination of seasoned sausage, melted sharp cheddar, and golden crescent dough creates soft, cheesy bites with a crisp outer layer that disappears fast from the plate.
Ingredients
1 lb (450 g) bulk pork breakfast sausage — mild or hot
2 cups (8 oz / 225 g) shredded sharp cheddar cheese
1 can (8 oz / 235 g) refrigerated crescent roll dough or crescent sheet
Optional Add-Ins
You can customize the recipe with:
1 teaspoon garlic powder
1 teaspoon onion powder
Crushed red pepper flakes
Chopped green onions
Diced jalapeños
Cooked crumbled bacon
A little cream cheese for extra richness
Instructions
Step 1: Prepare the Oven
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
Step 2: Cook the Sausage
Place the sausage in a skillet over medium heat.
Cook while breaking it apart into small crumbles using a spatula or wooden spoon. Continue cooking until fully browned and no pink remains.
Drain excess grease well and let the sausage cool slightly for a few minutes.
Step 3: Add the Cheese
Transfer the cooked sausage to a mixing bowl.
Add the shredded sharp cheddar cheese and stir until evenly combined. The warmth of the sausage will slightly melt the cheese, helping the filling stick together beautifully.
Step 4: Prepare the Dough
Open the crescent roll dough carefully and unroll it onto a clean surface.
If using regular crescent dough, pinch together the perforated seams to create one solid sheet.
Cut the dough into small squares or rectangles depending on the size you want.
Step 5: Fill and Roll
Place a spoonful of the sausage and cheese mixture onto each piece of dough.
Carefully roll or fold the dough around the filling, sealing the edges gently.
Arrange each bite seam-side down on the prepared baking sheet.
Step 6: Bake
Bake for 12–15 minutes, or until the crescent dough becomes puffed, golden brown, and crispy around the edges.
The cheese inside should be melted and bubbly.
Step 7: Serve
Allow the bites to cool for a few minutes before serving.
They taste amazing warm straight from the oven and pair well with:
Honey mustard
Ranch dressing
Spicy mayo
Marinara sauce
Maple syrup for a sweet-and-savory twist
Tips for the Best Crescent Bites
Sharp cheddar gives the richest flavor, but mozzarella or pepper jack also work well.
Hot breakfast sausage adds extra spice and depth.
Do not overfill the dough or it may burst open while baking.
For extra crispiness, brush the tops lightly with melted butter before baking.
Sprinkle sesame seeds or everything bagel seasoning on top for more texture and flavor.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
To reheat, place them in the oven or air fryer for a few minutes to keep the outside crispy.
They can also be frozen after baking. Just reheat directly from frozen until hot and crispy again.
