Slow Cooker Creamy Onion Beef Roast
This comforting beef roast turns incredibly tender after hours of slow cooking in a rich, savory onion and celery sauce. It’s the kind of hearty meal that fills the house with amazing aroma and tastes even better served over mashed potatoes, rice, or buttered noodles.
Ingredients
3 to 4 pounds boneless beef chuck roast
(trim excess surface fat if needed)
1 can (10.5 ounces) condensed cream of celery soup
1 packet (1 ounce) dry onion soup mix
Optional Additions
1 cup baby carrots
3–4 potatoes, cut into chunks
1 onion, sliced
1/2 cup beef broth for extra sauce
Black pepper to taste
Instructions
Place the beef chuck roast into the slow cooker.
In a bowl, mix together the cream of celery soup and dry onion soup mix until combined. If you want more gravy, stir in a little beef broth.
Pour the mixture evenly over the roast, making sure the top is well coated.
If using vegetables, place them around the roast inside the slow cooker.
Cover with the lid and cook:
On LOW for 8–9 hours
Or on HIGH for 5–6 hours
The roast is ready when the beef becomes fork-tender and easily pulls apart.
Remove the roast carefully and let it rest for a few minutes before slicing or shredding.
Spoon the creamy onion gravy over the meat before serving.
Serving Suggestions
Creamy mashed potatoes
Buttered egg noodles
Steamed rice
Roasted vegetables
Warm dinner rolls
Tips for the Best Roast
Chuck roast works best because the slow cooking breaks down the connective tissue, making the meat tender and juicy.
Searing the roast in a hot pan before slow cooking adds extra flavor, though it’s optional.
Leftovers make excellent sandwiches the next day.
If the sauce feels too thick, stir in a splash of warm beef broth before serving.
This simple three-ingredient roast is one of those classic comfort meals that tastes like it took all day of hard work, even though the slow cooker does almost everything for you.
