Garlic Butter Lobster & Scallops
Ingredients:
– 2 lobster tails
– 250g scallops
– 3 tablespoons butter
– 4 cloves garlic, minced
– 1 tablespoon lemon juice
– Salt and black pepper, to taste
– Fresh parsley, chopped
– 1 tablespoon olive oil
Instructions:
1. Prepare the lobster:
Using kitchen scissors, cut the top of the lobster tails lengthwise. Season with salt and pepper, then brush with a little melted butter.
2. Cook the lobster:
Preheat your oven to 180°C (350°F). Place the lobster tails on a baking tray and bake for 10–12 minutes, or until the meat is opaque and fully cooked.
3. Sear the scallops:
Heat olive oil in a pan over medium-high heat. Add the scallops and cook for 2–3 minutes on each side until golden brown. Remove and set aside.
4. Make the garlic butter sauce:
In the same pan, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant (do not burn). Stir in lemon juice and parsley.
5. Serve:
Place the lobster tails and scallops on a plate. Drizzle generously with the garlic butter sauce and serve immediately
Tips:
– Do not overcook scallops; they should be tender and slightly firm.
– Add a pinch of chili flakes for a spicy kick.
– Serve with rice, pasta, or grilled vegetables for a complete meal.
