A simple, beginner-friendly version of Morocco’s famous soup 👇
🥘 Ingredients:
200g beef (cut small) – optional
1 onion, finely chopped
2 tomatoes (blended)
2 tbsp olive oil
2 tbsp parsley & cilantro (chopped)
1 tsp turmeric
1 tsp ginger
1/2 tsp black pepper
Salt to taste
1/2 cup lentils (rinsed)
1/2 cup chickpeas (soaked or canned)
1 handful vermicelli
2 tbsp flour + 1 cup water (for thickening)
1–1.5 liters water
👨🍳 Instructions:
Cook the base
In a pot, add olive oil, onion, meat (optional), parsley, cilantro, and spices. Cook for 5 minutes.
Add tomatoes & legumes
Add blended tomatoes, lentils, and chickpeas. Mix well.
Simmer
Pour water, cover, and cook for 25–30 minutes until everything is soft.
Thicken the soup
Mix flour with water until smooth, then slowly pour into the soup while stirring continuously.
Final step
Add vermicelli and cook for another 5–10 minutes until the soup becomes rich and slightly thick.
🍋 Serving:
Serve hot with lemon wedges and bread.
❤️ Tips:
Stir well after adding flour to avoid lumps
Adjust thickness by adding more water if needed
For vegetarian version: skip the meat
