A classic Moroccan dish, rich in flavor with tender chicken, olives, and preserved lemon 👇

🥘 Ingredients:
1 whole chicken (cut into pieces) or 4–6 chicken thighs
2 onions, finely chopped
3 cloves garlic, minced
3 tbsp olive oil
1 tsp ginger
1 tsp turmeric
1/2 tsp black pepper
Salt to taste
A pinch of saffron (optional)
1 preserved lemon (cut into quarters)
1 cup green olives
Fresh parsley & cilantro (chopped)
1 cup water
👨🍳 Instructions:
Prepare the base
In a tagine or pot, add olive oil, onions, garlic, parsley, and cilantro. Cook for a few minutes.
Add the chicken
Place the chicken in the pot and mix with the onions.
Season
Add ginger, turmeric, black pepper, salt, and saffron. Mix well.
Cook slowly
Add water, cover, and cook on low heat for 35–45 minutes.
Add olives & preserved lemon
Add them halfway through cooking.
Finish
Cook until the chicken is tender and the sauce becomes thick.
🍽️ Serving:
Serve hot with Moroccan bread (khobz).
