Ingredients:
2 large cucumbers, thinly sliced
1/2 small red onion, thinly sliced (optional)
1/2 cup sour cream (or Greek yogurt for a healthier option)
1–2 tablespoons mayonnaise (optional for extra creaminess)
1–2 teaspoons white vinegar or lemon juice
1 teaspoon sugar (optional)
Salt and black pepper to taste
Fresh dill, chopped (about 1–2 tablespoons)
Instructions:
Prepare the cucumbers: Wash and thinly slice the cucumbers. You can peel them if you prefer.
Salt the cucumbers: Place the cucumber slices in a colander, sprinkle lightly with salt, and let them sit for 10–15 minutes to draw out excess water. Pat dry with a paper towel.
Make the dressing: In a bowl, mix sour cream, mayonnaise (if using), vinegar or lemon juice, sugar (if using), salt, and pepper until smooth.
Combine: Add cucumbers and red onion to the dressing. Mix gently until all slices are coated.
Chill: Refrigerate for at least 30 minutes to let the flavors meld.
Serve: Sprinkle with fresh dill before serving. Enjoy cold as a side dish!
