Classic Carrot Cake Recipe
Carrot cake is a timeless dessert known for its moist texture, subtle sweetness, and warm spices. Perfect for birthdays, holidays, or any special occasion, this classic recipe combines fresh carrots, cinnamon, and a creamy cream cheese frosting.
Ingredients
For the Cake:
2 cups all-purpose flour
2 teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg (optional)
1 ½ cups vegetable oil
1 cup granulated sugar
1 cup brown sugar
4 large eggs
3 cups finely grated carrots
1 cup crushed pineapple, drained (optional for extra moisture)
1 cup chopped walnuts or pecans (optional)
1 teaspoon vanilla extract
For the Cream Cheese Frosting:
8 oz (225 g) cream cheese, softened
½ cup unsalted butter, softened
4 cups powdered sugar
2 teaspoons vanilla extract
Instructions
1. Prepare the Oven and Pans
Preheat oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans, or line with parchment paper.
2. Make the Cake Batter
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, beat together the oil, granulated sugar, and brown sugar until smooth.
Add eggs one at a time, beating well after each.
Stir in vanilla, then fold in grated carrots, crushed pineapple, and nuts (if using).
Gradually add the dry ingredients, mixing until just combined.
3. Bake the Cake
Divide the batter evenly between the prepared pans.
Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then remove and cool completely on a wire rack.
4. Make the Frosting
Beat the softened cream cheese and butter together until smooth and creamy.
Gradually add powdered sugar and vanilla extract, mixing until fluffy.
5. Assemble the Cake
Place one cake layer on a serving plate and spread a layer of frosting on top.
Place the second cake layer on top and frost the top and sides of the cake evenly.
Decorate with extra chopped nuts or carrot decorations if desired.
