Cauliflower Vegetable Soup (No Meat)
🛒 Ingredients
1 medium head cauliflower, cut into florets
1 medium carrot, shredded
1/4 cup celery, chopped
1 medium leek, cleaned and sliced
2 1/2 cups water
2 teaspoons chicken bouillon or 1 vegetable bouillon cube
Salt and black pepper to taste
Optional: fresh parsley for garnish
👩🍳 Instructions
Wash and prepare all vegetables.
In a medium pot, bring the water to a boil.
Add the cauliflower, carrot, celery, and leek.
Stir in the bouillon (chicken or vegetable).
Reduce heat and let it simmer for 20–25 minutes, until vegetables are soft.
Season with salt and black pepper to taste.
You can blend the soup for a creamy texture or leave it chunky.
Serve hot and garnish with fresh parsley if desired.
