Beetroot Vitality Salad
🛒 Ingredients:
2 medium cooked beetroots, peeled and sliced
1 cup mixed greens (spinach, arugula, or lettuce)
1/2 cup walnuts, chopped
1/4 cup feta cheese, crumbled
1 small apple, thinly sliced
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
Salt and black pepper to taste

Slice the cooked beetroots into thin rounds or cubes.
In a large bowl, combine mixed greens, beetroot slices, apple slices, and walnuts.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
Drizzle the dressing over the salad and toss gently to combine.
Sprinkle feta cheese on top just before serving.
