Baked Zucchini Balls

These baked zucchini balls are a delicious and healthy snack or appetizer. They are crispy on the outside, soft on the inside, and made with simple ingredients. Perfect as a light meal, side dish, or party appetizer.

 

Ingredients

2–3 medium zucchini, grated

2 eggs

3/4 cup breadcrumbs

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried parsley or basil

Salt and black pepper to taste

Instructions

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

Grate the zucchini and squeeze out as much liquid as possible using a clean kitchen towel.

In a bowl, mix the zucchini, eggs, breadcrumbs, Parmesan cheese, garlic, herbs, salt, and pepper.

Shape the mixture into small balls.

Place them on the baking sheet and lightly brush with olive oil.

Bake for about 25–30 minutes until golden and slightly crispy.

Serve warm with your favorite dipping sauce and enjoy!
