Slow Cooker Cabbage and Noodles (Easy Comfort Meal)

Ingredients

2 pounds corned beef (cut into cubes)

1 small head green cabbage (chopped)

4 cups beef broth

2 tablespoons Dijon or whole-grain mustard

12 ounces wide egg noodles

Prepare the base

Place the chopped cabbage evenly at the bottom of your slow cooker.

Add the meat

Scatter the corned beef pieces over the cabbage. Try to tuck some pieces between the cabbage layers for even cooking.

Mix the liquid

In a bowl, whisk together the beef broth and mustard until well combined.

Pour and cook

Pour the mixture over the cabbage and beef.

Cover and cook:

On LOW for 7–8 hours

Or on HIGH for 4–5 hours

until the meat is tender and the cabbage is soft.

Cook the noodles

About 20 minutes before serving, boil the egg noodles according to package instructions. Drain well.

Combine everything

Gently stir the slow cooker mixture to break up the beef and mix it with the cabbage.

Add noodles

Add the cooked noodles to the slow cooker and toss gently so they absorb the flavorful broth.

 

 

Let it rest

Leave everything on LOW or WARM for 5–10 minutes so the noodles soak up the juices.

Serve hot in bowls, making sure to spoon some broth over each portion.
