Ingredients

2 pounds pickling cucumbers

4–6 garlic cloves, peeled and lightly crushed

1 bunch fresh dill or 2 tablespoons dill seeds

1 teaspoon red pepper flakes

1 tablespoon mustard seeds

1 tablespoon coriander seeds

1 tablespoon black peppercorns

2 ½ cups white vinegar

2 ½ cups water

2 tablespoons sugar

2 tablespoons salt

Instructions

1. Prepare the Cucumbers

Wash the cucumbers well. Cut them into spears or slices depending on your preference.

2. Make the Brine

In a saucepan, combine the vinegar, water, sugar, and salt. Heat the mixture and stir until the sugar and salt completely dissolve.

3. Add the Spices

Place the garlic, dill, red pepper flakes, mustard seeds, coriander seeds, and black peppercorns into clean glass jars.

4. Pack the Cucumbers

Add the cucumber spears into the jars, packing them tightly with the spices.

5. Pour the Brine

Carefully pour the hot brine over the cucumbers until they are fully covered.

6. Cool and Store

Allow the jars to cool at room temperature. Once cooled, seal them and place them in the refrigerator. The pickles will start to develop flavor after 24 hours, but they taste even better after a few days.

Tips

For extra heat, add fresh chili peppers to the jars.

Smaller cucumbers usually stay crunchier.

These pickles are perfect for sandwiches, burgers, or as a tangy snack straight from the jar.
