Pineapple Upside Down Cake
📝 Ingredients:
1 can pineapple slices (reserve the juice)
1/3 cup brown sugar
1/4 cup butter
Maraschino cherries
1 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup vegetable oil
1 egg
1/2 cup pineapple juice (from the can)
👩‍🍳 Instructions:
Preheat oven to 350°F (180°C).
Melt the butter and pour it into the bottom of a 9-inch round cake pan.
Sprinkle the brown sugar evenly over the melted butter.
Arrange the pineapple slices on top of the sugar layer.
Place a maraschino cherry in the center of each pineapple slice (and between slices if desired).
Prepare the batter:
6. In a mixing bowl, whisk together the flour and sugar.
7. Add the oil, egg, and pineapple juice.
8. Mix until smooth and well combined (do not overmix).
Carefully pour the batter over the pineapple layer and spread evenly.
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for about 10 minutes.
Run a knife around the edges, then carefully invert onto a serving plate.
