Ingredients:
1 lb beef (stew meat or chuck roast, cut into pieces)
3 large potatoes, peeled and chopped
1 large onion, sliced
2 cups beef broth
Instructions:
Place the beef pieces in a large pot or slow cooker.
Add the chopped potatoes and sliced onion on top of the meat.
Pour the beef broth over everything.
Cover and cook on low heat for about 6–7 hours (or simmer on the stove for about 1.5–2 hours) until the beef becomes tender and the potatoes are soft.
Season with salt and pepper to taste before serving.
