Crockpot Cowboy Mac n’ Cheese

Ingredients
* 2 lbs ground beef (browned & drained)
* 1 packet chili seasoning mix
* 2 cans (10 oz each) Rotel (diced tomatoes with green chilies)
* 2 cans (15 oz each) chili beans (or kidney beans)
* 4 cups beef broth
* 1 lb elbow macaroni (uncooked)
* 2 cups shredded cheddar cheese
* 8 oz Velveeta (cubed)

Directions:
1. Brown & Drain Beef – In a skillet, cook ground beef until no pink remains. Drain excess grease.
2. Dump in Crockpot – Add beef, chili seasoning, Rotel, beans, and beef broth. Stir.
3. Cook – Cover and cook on LOW 6–7 hours or HIGH 3–4 hours.
4. Add Pasta & Cheese – 30 minutes before serving, stir in elbow macaroni, cheddar, and Velveeta. Cover and let pasta cook + cheese melt.
5. Serve Hot – Stir well, let it thicken, and scoop into bowls. Top with more cheese if you want a stronger cheese pull.
