Southern Pimento Cheese Tea Sandwiches
These classic tea sandwiches are a timeless favorite, often served at gatherings, parties, and special occasions. Creamy, rich, and full of flavor, they’re incredibly easy to make and always disappear fast.
Ingredients:
8 oz sharp cheddar cheese (freshly shredded)
4 oz extra-sharp cheddar cheese (freshly shredded)
1 (4 oz) jar diced pimentos (well drained)
3/4 cup mayonnaise
2 tbsp cream cheese (optional, for extra creaminess)
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika
Salt and black pepper to taste
1–2 tsp pimento juice or milk (if needed)
16 slices soft white bread
Butter (optional)
Instructions:
Prepare the cheese mixture
In a bowl, combine the shredded cheeses.
Add the pimentos
Mix in the drained diced pimentos.
Make it creamy
Add mayonnaise and cream cheese, then mix until smooth.
Season
Stir in garlic powder, onion powder, paprika, salt, and pepper.
Adjust consistency
Add a small amount of pimento juice or milk if needed to make it easier to spread.
Chill
Cover and refrigerate for at least 30 minutes.
Assemble sandwiches
Spread the mixture on bread slices and top with another slice.
Cut and serve
Remove crusts and cut into triangles or small squares.
Tips:
Freshly shredded cheese gives the best texture
Chilling improves the flavor
Add a pinch of cayenne pepper if you like a bit of heat
