Cheesy Beef Enchiladas are a delicious and comforting dish that brings together seasoned ground beef, soft tortillas, rich sauce, and plenty of melted cheese. Ingredients

1 pound (450 g) ground beef

1 small onion, finely diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

½ teaspoon paprika

Salt and black pepper to taste

2 cups enchilada sauce or tomato sauce

8 medium flour tortillas

2½ cups shredded cheddar cheese or Mexican cheese blend

1 tablespoon olive oil

Fresh parsley or cilantro for garnish (optional)

Instructions

Step 1: Prepare the Filling

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the garlic and cook for another minute until fragrant.

Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat. Season the beef mixture with chili powder, cumin, paprika, salt, and black pepper. Stir well to combine all the flavors.

Pour about ½ cup of the enchilada sauce into the skillet and mix thoroughly. Allow the mixture to simmer for 3 to 5 minutes until slightly thickened.

Step 2: Assemble the Enchiladas

Preheat your oven to 375°F (190°C).

Spread a thin layer of enchilada sauce across the bottom of a large baking dish. This prevents the tortillas from sticking and adds extra flavor.

Lay a tortilla flat on a clean surface. Spoon a generous amount of the beef mixture into the center and sprinkle with a little cheese. Roll the tortilla tightly and place it seam-side down in the baking dish.

Repeat with the remaining tortillas until the baking dish is filled.

Step 3: Add Sauce and Cheese

Pour the remaining enchilada sauce evenly over the rolled tortillas, making sure they are well covered. Top generously with the remaining shredded cheese.
