🍲 Slow Cooker Beef & Rice
🛒 Ingredients
500–700g beef (stew meat or chuck, cut into chunks)
1 cup uncooked rice (basmati or long grain works well)
1 small onion, chopped
2–3 cloves garlic, minced
2 cups beef broth
1 cup water
1 cup mixed vegetables (carrots, peas, capsicum)
1 tsp salt (adjust to taste)
½ tsp black pepper
1 tsp paprika (optional)
½ tsp turmeric or cumin (optional for extra flavor)
1–2 tbsp oil

👩‍🍳 Instructions

  1. Sear the beef (recommended)

Heat oil in a pan and lightly brown the beef for extra flavor.

  1. Add to slow cooker

Put beef, onion, garlic, vegetables, and spices into the cooker.

  1. Add liquids

Pour in beef broth and water. Stir gently.

  1. Cook

Cover and cook:
Low: 6–7 hours
High: 3–4 hours

  1. Add rice (important step!)

About 45–60 minutes before serving, stir in the uncooked rice.

  1. Final cook

Let it cook until rice is tender and has absorbed most of the liquid.

If rice gets too soft, add it later next time (30–40 min before end).
