12 oz smoked sausage (Andouille or kielbasa), sliced

1 lb baby potatoes, halved or quartered

3 ears corn, cut into thirds (or 2 cups frozen corn)

3 tbsp melted butter

2 tbsp olive oil

3 cloves garlic, minced

1½ tsp Old Bay seasoning

1 tsp smoked paprika

½ tsp garlic powder

½ tsp onion powder

Salt & black pepper, to taste

1 lemon, sliced

Fresh parsley, chopped (optional)

🔥 Instructions

  1. Preheat
    Grill: Medium-high heat (about 400°F)

  1. Prep the Potatoes (Important!)
    Potatoes take longer than shrimp.

Boil or microwave potatoes 5–7 minutes until just barely tender.

Drain and let steam dry.

👉 This prevents undercooked potatoes later.

  1. Assemble the Foil Packs
Tear 4 large sheets of heavy-duty foil.

Divide potatoes, corn, sausage, and shrimp evenly among foil sheets.

In a small bowl, mix butter, olive oil, garlic, Old Bay, paprika, garlic powder, onion powder, salt, and pepper.

Drizzle seasoning mixture over each pack.

Toss gently to coat.

Top with lemon slices.

  1. Seal & Cook
Fold foil tightly, sealing edges well.

Grill: 12–15 minutes, flipping once

Oven: 20–25 minutes

Shrimp should be pink and cooked through.

  1. Finish & Serve
    Carefully open foil (hot steam!).
Sprinkle with parsley and add extra butter or lemon if desired.

Serve straight from foil or transfer to a platter.

❓ Q & A

A: Yes—thaw completely and pat dry before using.

Q: What sausage works best?
A:

Andouille = smoky & spicy

Kielbasa = mild & savory

Smoked turkey sausage works too

Q: Can I make this spicy?
A: Add:

Cayenne pepper

Red pepper flakes

Cajun seasoning instead of Old Bay

Q: Can I prep these ahead of time?

Don’t overdo the butter

Use high heat

Seal tightly but leave a little space for steam

Garlic bread

Coleslaw

Simple green salad
