Ingredients
- Ground beef → 500 g
- Olive oil → 1 tablespoon
- Onion, diced → 1 small
- Garlic, minced → 2 cloves
- Potatoes, chopped and peeled → 2 medium
- Carrots, sliced → 2
- Green beans (fresh or frozen) → 1 cup
- Corn kernels → 1 cup
- Peas → 1/2 cup
- Diced tomatoes → 1 can (400 g)
- Beef broth → 4 cups
- Tomato paste → 1 tablespoon
- Paprika → 1 teaspoon
- Dried thyme → 1/2 teaspoon
- Salt and black pepper → to taste

Beef and Veggie Soup: Instructions
- Add the ground beef to a large pot under medium heat and cook until it is brown, breaking it up in the process.
- Then add diced onion and garlic, and cook until soft and fragrant.
- Add tomato paste, paprika and thyme and stir in the beef.
- Add carrots, peas, green beans, and corn, diced potatoes, and tomatoes.
- Add the beef broth and boil.
- Turn down heat and allow to simmer 25-30 minutes until vegetables are tender.
- Add salt and black pepper, stir and serve hot.
