THE BEST ZUCCHINI MUFFINS EVER

 Ingredients:

  • 1 ½ cups grated zucchini (don’t peel)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ½ tsp cinnamon
  • ½ cup brown sugar
  • ½ cup white sugar
  • 2 large eggs
  • ½ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • Optional: ½ cup chopped walnuts or chocolate chips

  1. Preheat oven to 180°C / 350°F and line a muffin tin.
  2. In one bowl, mix dry ingredients — flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, whisk eggs, sugars, oil, and vanilla until smooth.
  4. Stir in grated zucchini.
  5. Gently fold in the dry ingredients (and nuts or chocolate chips, if using).
  6. Fill muffin cups ¾ full and bake 18–22 minutes, until golden and springy on top.
  7. Cool slightly… then try not to eat them all at once
