Ideal for fried chicken, fish, tempura vegetables, or onion rings. Easy to prepare and store in a jar.
Ingredients (for a small jar):
3/4 cup all-purpose flour (about 90 g)
2 tablespoons cornstarch
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
To add when mixing:
3/4 cup cold water (about 180 ml)

Instructions:
- Prepare the dry mix
In a jar or bowl, combine all the dry ingredients (flour, cornstarch, baking soda, baking powder, and salt).
Seal the jar tightly if preparing in advance. - Prepare the batter
Just before frying, add 3/4 cup of very cold water (or sparkling water for an even lighter, airier batter).
Whisk quickly until you get a smooth, fluid batter (not too thick, not too runny). - Use
Dip pieces of chicken, fish, or vegetables into the batter.
Fry immediately in hot oil at 180°C (350°F) until golden brown and crispy.
