Morning cookies that my grandmother used to make for me: I finally found the recipe I had been looking for for so long!

Ingredients:
250 g of light fresh cheese or ricotta (ricotta is also an option)

230 g of all-purpose wheat flour

8 g of baking powder (about ½ tablespoon)

2 tablespoons of sweetener (for example stevia) or regular sugar / erythritol / maltitol

2 tablespoons of vegetable oil (for example sunflower oil)

1 egg

A pinch of salt

A few drops of vanilla extract

Powdered sugar for dusting

Preparation:
Prepare the dough: in a bowl, mix the cheese with the egg, oil, sweetener (or sugar), salt, and vanilla.

Add the dry ingredients: add the flour mixed with the baking powder and knead until you get a smooth and soft dough.

Shaping: take pieces of dough, form them into balls, slightly flatten them, and make a hole in the center (like donuts).

Baking: arrange the cookies on a baking sheet lined with parchment paper and bake at 180°C (top and bottom heat) for about 18-20 minutes, until lightly golden.

Decoration: after cooling, sprinkle with powdered sugar.

Tips:
If you prefer a lighter version, use erythritol instead of sugar and choose low-fat ricotta.

Cookies are best enjoyed fresh, but they can be stored in a sealed container for up to 2 days.

Adding the grated zest of a lemon or an orange will give a fresher aroma.
