Apple Cider Pork Roast

A tender, juicy pork roast slowly cooked with sweet apples, onions, herbs, and apple cider. The long cooking time allows the flavors to blend beautifully, creating a rich and comforting meal that is perfect for family dinners and special occasions.

Ingredients

1 pork roast (about 1.8 kg / 4 lb)

4 cups apple cider

2 cups chicken broth

3 apples, cut into wedges

2 onions, sliced

4 garlic cloves, minced

2 tablespoons olive oil

2 tablespoons Dijon mustard

2 tablespoons brown sugar

2 sprigs fresh rosemary

2 sprigs fresh thyme

Salt and black pepper to taste

Instructions

Preheat your oven to 160°C (325°F).

Pat the pork roast dry and season generously with salt and black pepper.

Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.

Sear the pork on all sides until golden brown.

In a small bowl, mix the Dijon mustard and brown sugar, then spread the mixture over the roast.

Add the apples, onions, garlic, rosemary, and thyme around the meat.

Pour in the apple cider and chicken broth.

Cover the pot and place it in the oven.

Roast for 3 to 4 hours, or until the pork is very tender and easily pulls apart with a fork.

Remove the roast from the oven and let it rest for 10 minutes before slicing.

Serve with the cooked apples, onions, and the flavorful cider sauce.

Tips

For extra flavor, marinate the pork in apple cider for a few hours before cooking.

If you prefer a thicker sauce, remove the pork after cooking and simmer the liquid on the stovetop until reduced.

Serve with mashed potatoes, roasted vegetables, or crusty bread to soak up the delicious sauce.

Why You’ll Love This Recipe

The sweetness of the apples and cider perfectly balances the savory richness of the pork. The result is a melt-in-your-mouth roast with a fragrant sauce that tastes like comfort food at its finest. Perfect for a cozy weekend meal or a festive gathering with family and friends.
