🍍 Grandma-Style Pineapple Caramelized Pork

🥩 Ingredients

1 to 1.5 kg pork loin or pork shoulder (cut into chunks or slices)

1 can pineapple chunks (keep the juice)

1 medium onion (sliced)

3–4 cloves garlic (minced)

2–3 tbsp brown sugar (or honey)

3 tbsp soy sauce

1 tbsp vinegar (apple cider or white)

1 tbsp ketchup or tomato paste (optional, for richer glaze)

1 tsp black pepper

1 tsp paprika or mild chili (optional)

2 tbsp oil

Salt to taste

1. Brown the pork

Heat oil in a large pan.

Season pork with salt and pepper.

Sear until golden on all sides (this builds flavor).

2. Build the base

Add onion and garlic, cook until soft.

Stir in soy sauce, vinegar, pineapple juice, and brown sugar.

Let it simmer for a few minutes until slightly thickened.

3. Add pineapple + bake (or simmer)

Add pineapple chunks.

Transfer everything to a baking dish (or keep in pan if stovetop cooking).

Cover with foil.

4. Slow cook for caramelization

Bake at 180°C (350°F) for 45–60 minutes (or simmer on low heat 50–70 minutes)

Uncover for last 10–15 minutes so the sauce becomes sticky and caramelized.

5. Serve

Serve hot over white rice.

Spoon extra caramelized sauce on top.
