Full Recipe: Slow Cooker 3‑Ingredient Cajun Butter Potato Packets
Servings: 4
Ingredients:
2 lb (≈ 900 g) small potatoes (baby reds, Yukon gold, or fingerlings), scrubbed and halved if large
6 tbsp (≈ 85 g) unsalted butter, melted
2 tbsp Cajun seasoning
Directions:
Tear 4 large sheets of heavy‑duty aluminum foil (≈ 12–14″ each). Lightly crimp up the edges so they’ll hold the contents without leaking.
In a large bowl, place the scrubbed potatoes. Drizzle melted butter over them and sprinkle Cajun seasoning evenly. Toss until all pieces are well coated.
Divide the seasoned potatoes evenly among the 4 foil sheets, placing the potatoes in the center and including any seasoned butter drippings.
Fold the long sides of each foil sheet up over the potatoes and roll the edges to seal, making snug packets.
Arrange the packets in the slow cooker in a single layer (or gently stack if needed). Cover with the lid.
Cook on HIGH for 2½–3 hours or LOW for 4–5 hours, until potatoes are tender when pierced with a fork.
Remove packets carefully with tongs or oven mitts. Open at the table and spoon any melted Cajun butter over the potatoes before serving.
Serving suggestions: These spicy, buttery potatoes pair well with grilled meats, roasted chicken, or a simple green salad.
