It\u2019s economical, hearty, and very versatile. Over the years, I\u2019ve tweaked it several times\u2014sometimes adding mushrooms, other times spinach\u2014but the base has always remained the same. Why? Because it works. It\u2019s an easy recipe to prepare in a baking dish. It\u2019s the perfect dinner for those busy days when you need something comforting.
